PRIVATE DINING CELLAR SERIESFÊTE DE ROSÉCOCHON 555

Since 2009, COCHON 555 has been roving the nation in celebration of heritage breed animals, stopping in ten cities, where five local chefs are selected to participate in a "snout-to-tail" competition. The winner from each city then goes on to compete in Grand Cochon, which takes place during the Food & Wine Classic in Aspen, Colorado.

This year, our very own Chef Jason Vincent took the crown as "Prince of Porc," using a Tamworth breed hog from Triple S Farms. The judges and audience selected Jason and his crew as the top team for the night; that their passion lasted through many hard weeks of butchering, cooking, and even mannequin-rigging (see the photo!) for the big day on April 29th, was apparent to COCHON 555 attendees from the first glimpse of their setup down to the last bite of "bloody mary" sausage. This June they will do it all over again, competing on the national level. On to Aspen!
